Information
If
you're considering opening a new business or buying an existing business
that requires the manufacture, preparation or storage of food for sale,
the premise must be registered with the Council under the Food Hygiene
Regulations 1974.
This
includes restaurants and cafes, bakeries, dairies, grocers, supermarkets
etc. All food for sale in your premises must also be made on a
registered premises. Food cannot be produced in the home kitchen for
sale. As a food premise operator you must also hold a food hygiene
training certificate.
Any
food premise is subject to regular inspection and annual renewal and
registration and must meet food hygiene standards. A full set of food
regulations is available at public libraries or from bookshops selling
Government legislation.
You
cannot open your food premises to the public unless you are registered.
New premises
If
you are thinking about setting up a restaurant or cafe there are a
number of steps you will need to consider including:

Ensure that the activity proposed is allowed in the chosen area. You
will need to talk with a planner about the location and type of
business proposed and parking requirements.

Organise a food licence - this includes meeting with an
Environmental Health Officer on site, where he or she will go
through all the Food and Hygiene requirements. At least one staff
member in a supervisory role requires a basic food hygiene
certificate. You may also need a Liquor Licence. The Environmental
Health Officer will be able to assist you with this also.

Check with the Council for any building
requirements - a building consent may be required for any
alterations or additions to the premises, such as for disabled
access, fire rating requirements, ighting, noise and air extraction
which may affect neighbouring premises. etc.

intend to operate as a wholesale outlet or food manufacturer you will
also need to contact a Health Protection Officer at Auckland Healthcare,
telephone 09 262 1855. They can advise you about labelling, ingredients and
preservative requirements.
